John “Smitty” Smith founded Smitty’s back in 1981, but its origins go back further than that. John Smith logged more than 12,000 hours in his aviation career, first in the United States Marine Corps and later with Air America, Southern Air Transport and Civil Air Transport. He flew during the Vietnam War and received distinction for his time when he was introduced into the Gathering of Eagles along with Chuck Yeager, the first person to travel faster than the speed of sound, and other exceptional aviators.
Smitty’s Barbecue & Salad Bar was originally opened as a Sonny’s in April 1980, and operated as such until September 1981. After a disagreement with Sonny’s corporate, John went out on his own with Smitty’s Barbecue & Salad Bar.
In Smitty’s long history of serving barbecue, one of the things we’ve learned is that there are as many varieties of barbecue as there are people tasting it. Barbecue is southern, but it has been carried to all corners of the world!
